FIREBIRD TO OPEN IN SOHO

Madina Kazhimova and Anna Dolgushina, the St Petersburg-based restaurateurs who run Wong Kar Wine, are coming to London with Firebird this spring. Opening on the old Corazon site in Soho, it’ll be something of a departure for the pair, focusing on European flavours, pickling and fermenting, and cooking over fire rather than the modern Thai food they serve at Wong Kar Wine.

The menu will include the likes of homemade salami, bresaola & lardo; raw seabass with fermented fennel & charred pineapple vinaigrette; chicken liver pate eclair with puffed raisins; rump steak with burnt onions & smoked bone marrow; and roast duck breast with plum chutney & burnt plums. Anna Dolgushina is a sommelier so she’ll be in charge of the wine list but the cocktails, like the toasted white sesame sour, sound interesting as they’ll also feature some flame-cooked ingredients.
