CARLO SCOTTO TO OPEN AMETHYST IN MAYFAIR

Carlo Scotto, previously head chef at Xier, is swapping Marylebone for Mayfair this spring to open a new restaurant Amethyst. The two-floor, 36-cover spot will serve up three- and five-course menus at lunchtime before switching to six- and 12-course tasting menus at dinner. The ground floor will feature just one table (made with amethyst and quartz) seating 20 and will offer a 12-course menu that’ll blend British produce with Nordic, Japanese, French and Arabic influences – that means dishes like burnt hay croquette; yuba tartelette with caviar & scallops; salmon & foie gras; caramel miso black cod & naganegi dashi; and ras el hanout beef with apple & date.

If you head downstairs to the wine cellar, you’ll be able to go for a six-course tasting menu as well as the 12-course one, and you’ll be able to check out the restaurant’s collection of fine and rare wines. Of course you can sample them too with both classic and prestige wine pairings matched by sommelier Filippo Carnevale. And if you want something really spesh, you can book out the chef’s table for a private dinner.
